This is water containing dissolved carbon dioxide gas by infusing it under pressure. Soda water sparkling water, club soda or especially in the United States, seltzer or seltzer water are also synonyms for carbonated water.

The PH level of carbonated water is 3-4, which means it’s slightly acidic. However, drinking an acidic beverage like carbonated water will not make our body more acidic because kidneys and lungs remove excess carbon dioxide and maintain our body at a slightly alkaline PH 7.35-7.45.

The combination of high sugar content coupled with this acidity makes the drink fizzy and it gives good mouth sensation and a moreish taste by responding pain receptors on our tongue to this acid.

Sucrose ( C12H22O11) is the scientific name for common sugar or table sugar which is extracted and refined from either sugarcane or sugar beet. It is a disaccharide, a molecule composed of two monosaccharides: glucose and fructose and broken back down into the latter during digestion. Sucrose tastes less sweet than fructose but sweeter than glucose.

The World Health Organization recommends limiting added sugars to 5-10% of daily calorie consumption or in other words we have to keep the added sugars in between 25-50 grams if we take 2,000 calories per day.

 CARAMEL COLOR (Caramel E 150D)

Caramel colour is a water-soluble food colouring having colour ranges from pale yellow to amber to dark brown. It has an odour of burnt sugar and a somewhat bitter taste but it will not have significant effects on the flavour profile of the finished product.

Heat treatment of carbohydrates (sugars), in the presence of acids, alkalis or salts in a process called caramelization will produce this colouring. Recently, Coca-Cola assured that its colas are not containing 4-MEI compound which may cause cancer as per the study by consumer reports.

PHOSPHORIC ACID ( 43mg per 250ml)

Phosphoric acid (H3PO4) is a colourless, odourless crystalline liquid with a syrupy consistency. It gives Coca-Cola a tangy flavour and prevents the growth of mould and bacteria in this sugar-rich beverage. Due to the use of Phosphoric acid, cola is more acidic than lemon juice or vinegar but the vast amount of sugar acts to mask and balance the acidity.

Coca-Cola uses Phosphoric acid instead of Citric acid because of the strongness and thus gives more of a prickly sensation to compliment the carbonated fizz.


According to Federal regulations, natural flavour must be derived from nature or synthesized from something derived from nature and its significant function in food is flavouring rather than nutritional. For more than a century, Coke has secretly guarded its recipe, created in 1886 by John S Pemberton, a druggist in Atlanta while trying to concoct a health drink.

Coca Cola Company says that the formula has only the best spices from around the world carefully selected by Dr Pemberton and no added preservatives or artificial flavours. Further, they confirmed that the formula has not changed in 122 years.

CAFFEINE (23.6mg per 250 ml)

Caffeine is a natural stimulant that stimulates the brain and central nervous system by blocking the effects of adenosine. Adenosine is a neurotransmitter that relaxes the brain by making us more tired and causing us to want to go to sleep.

Caffeine may also increase blood adrenaline levels and increase brain activity. This combination further stimulates the brain and promotes a state of arousal, alertness, and focus. Caffeine is often referred to as a psychoactive drug. Food and Drug Administration (FDA) recommends taking less than 400 mg of caffeine per day.
